The Greek Souvlaki franchise was started in 1972 by Lee and Mary Paulos, and is now run by their three sons Frank, Leo, and Chris Paulos (we like to call them the 3 brothers). Their restaurants are a Utah Favorite, and we were so stoked to work with them on their newest restaurant . The idea was straightforward, create a space that referenced the sea towns of Greece, like Santorini but in a more subtle—not cheesy—way. We are blessed to have clients like them that help define the city we love and live in!
