Lee and Mary Paulos started the Greek souvlaki franchise in 1972. Lee’s two brothers, Tasos and Petropoulos, owned and operated a small restaurant in Piraeus, Greece. The restaurant was a tourist hot spot, and the top item on the menu was Gyros. Lee noticed the tourists loved them, and then and, there in the streets of Piraeus, he came up with the idea of bringing this beloved food back to Utah. The rest is Utah history, as rumor has it that they were the first to bring gyros to Utah.
The original store was a great success and has become known over the years as the iconic spot to get authentic Greek food in Utah. WOW atelier was commissioned to build the second Greek Souvlaki store in the state and was honored to be part of a project with such a rich Utah history!
